Newly appointed Executive Pastry Chef, Sonara Sieng brings his creative vision to life with the launch of ‘A Living Palette’, Rosewood Amsterdam‘s first afternoon tea concept celebrating nature and culinary artistry. The expertly crafted menu is an ode to Rosewood Amsterdam’s very own De Tuin garden, designed by world renowned landscape architect, Piet Oudolf, where visitors are invited to explore before they indulge. Showcasing a unique selection of pastries and savoury bites, the menu mirror the garden’s colours, textures, and shapes. 

INTRODUCING A NEW CULINARY LEGACY AT ROSEWOOD AMSTERDAM

With over 11 years of culinary experience, Chef Sonara Sieng has officially joined Rosewood Amsterdam as the property’s Executive Pastry Chef. Bringing his signature creativity combining timeless techniques with modern artistry, each creation is shaped with precision and a deep love for desserts that tell a story. After a three-year tenure as the Executive Pastry Chef at Rosewood Phnom Penh, he earned a favored reputation for his stunning custom cakes and creative flavor combinations that surprise and delight.

A LIVING PALETTE

‘A Living Palette’ celebrates the living art of the De Tuin Garden, the serene courtyard garden designed by Piet Oudolf, with shade-loving perennials, multi-stemmed trees, and a rich palette of green and purples translated into culinary artistry and flavors from Chef Sonara. Guests are encouraged to meander through the prestigious gardens before or after they sit down for tea. 

Each course is intentionally designed to enrich the senses and features a unique tea pairing to complement the fresh delicacies taking guests on a flavorful journey from start to finish, where the teas evolve alongside the menu.

The experience begins with striking, savory bites served at the table such as decadent marigold egg sandwich with Oscietra caviar, smoked Dutch eel on butter brioche, and steak tartare on a crispy shiso leaf. Paired with a green, Jasmine tea from Fuijan, China, the tea offers a slightly floral flavor that complements the savouries.

Following the savouries is a round of freshly baked traditional scones, clotted cream, and seasonal jam that is paired with a Blackcurrant & Hibiscus infusion. Vibrant yet refreshing helping balance the sweetness of the pastries. 

For the final course, guests have the opportunity to meet Chef Sonara himself and pick from a wide selection of seasonal pastries and sweets. Complete with a rotating seasonal tea specifically picked to perfectly balance out the delicately sweet flavors of Chef Sonara creations.

Through the debut of “A Living Palette”, each course was crafted to enrich the senses and create memorable experiences for guests to explore nature and seasonality through artistic culinary creations. 

The Court Hours:

Open from 10 am – 7pm daily 

Afternoon tea takes place on Saturdays and Sundays from 2 pm onwards. Reservations are required.
